RICE PUDDING

From Mom

Ingredients:

½         C         Long grain white rice OR 1 ½ cooked rice

1/3      C         sugar

1/8      tsp       cinnamon

1          tsp       vanilla

1          tsp       grated orange peel

2          C         milk

2                      eggs, slightly beaten

½         C         seedless raisins (suggested)

Directions:

Steam or boil rice according to directions. Combine rice with all other ingredients and pour into a well greased   1 ½ quart casserole dish.  Bake @ 325° for about 45 minutes, until a knife inserted in the center comes out clean.   Serve warm or cold with milk or cream.
