CARROT CAKE & Cream Cheese Frosting (below)
(from Mom’s Kitchen)
Preheat oven 325° Mix ingredients together.
Makes 2 loaf pans or 5 small loaf pans, or 9 x 13 cake pan
2 Cup Sugar
1 Cup Oil
3 —- Eggs
1 ½ tsp. Vanilla
MIX
½ tsp. Salt
1 tsp. Baking Soda
2 ½ Cup Flour
2 tsp. Cinnamon
MIX
2 Cup Fresh grated carrots
1 small can Crushed pinapple – undrained (8.25 oz can)
MIX
1 Cup Chopped Nuts
CREAM CHEESE FROSTING
½ Cup Butter – or margarine (1 stick)
4 Cups Powdered Sugar (1 pound)
8 oz. Cream Cheese
