POLLO LOCO

I love this recipe “Crazy Chicken” It’s so easy to make and Great nutrition!!

1 Onion

2  tsp Olive oil

1  lb. Gr. Chicken or Turkey

2  Garlic Cloves, minced

Tbl. Ground Cumin

Cans (14 1/20z.) Mexican Style Stewed Tomatoes

Can (28 oz.) Tomato Sauce

Can (15 0z.) Small White Beans, rinsed and drained

Can (15 oz.) Pink bean, rinsed and drained

 Cup (2 oz.) Shredded low-fat Monterey Jack Cheese

DIRECTIONS

Sauté’ onion in oil in large saucepan over medium heat until soft. Add chicken(turkey) and cook 5 minutes or until no longer pink.

Add garlic, pepper and Cumin. Cook 5 min. longer. Add tomatoes with juice, tomato sauce, and mushrooms.

Heat to boiling. Reduce heat to low, cover and simmer 30 minutes, stirring frequently.

Add beans and continue cooking another 15 minutes. Serve in a bowl and top with cheese.
